Grading

Grading is what turns a mixed farm collection into the uniform cartons a buyer actually orders.

In short: Grading is the sorting of eggs by weight band and quality, from Small to Jumbo, so cartons present uniformly to specification.

Grading is the process of sorting eggs into consistent categories so that what reaches the carton matches an agreed specification. The two main dimensions are weight and quality. By weight, eggs are banded as Small (43 to 48 g), Medium (48 to 53 g), Large (53 to 63 g), Extra large (63 to 73 g) and Jumbo (73 g and above). By quality, grading screens for shell soundness, interior condition and uniformity.

On our line, optical weight grading, candling and acoustic crack detection run in sequence, with results recorded batch by batch. The payoff for buyers is predictability: a carton of Large eggs looks and performs the same tray to tray and shipment to shipment, which matters for retail presentation and for bakery and processing recipes alike. Buyers specify the grade or grade mix they want, and we grade to it, with mixed-grade container loading available where one order needs to cover several lines.
