Quality & process

Quality that is verified, not asserted

Optical grading, candling and acoustic crack detection run in sequence, with every result recorded batch by batch.

Optical grading
Weight-band sorting so cartons present uniformly, tray to tray.
Candling
Interior inspection to screen out defects and confirm freshness before packing.
Acoustic crack detection
Micro-cracks the eye cannot see are screened out before a batch is packed.
Unbroken cold chain
Pre-cooled reefers held at an agreed set point, monitored from stuffing to discharge.

Recorded batch by batch

Shell strength, weight uniformity and Haugh units are verified against international specification before a pallet is sealed. Results are recorded per batch, and temperature records are available on request.

Haugh units run 78–90 at dispatch, and shelf life is 21–28 days ambient, up to 45 days at 5–8 °C depending on handling.

Questions

Frequently asked

What is a Haugh unit and what range do you ship?
The Haugh unit measures interior (albumen) quality — higher is fresher and firmer. We ship at 78 to 90 Haugh units at dispatch.
How do you prevent cracked eggs reaching the carton?
Every batch passes acoustic crack detection, which finds micro-cracks the eye cannot see, in addition to optical grading and candling.
