The Haugh unit
The Haugh unit is the industry measure of interior quality, calculated from the height of the thick albumen against egg weight. The higher the score, the fresher and firmer the egg. We ship at 78 to 90, which is what keeps whites standing tall on arrival. See quality and process.
Candling
Candling passes a bright light through the shell to reveal the air cell, yolk shadow and any internal defect or hairline crack. It is how we screen out eggs that look fine outside but should not travel.
The float test (and its limits)
Drop an egg in water: fresh eggs sink and lie flat, older eggs tilt up, and stale eggs float as the air cell grows. It is a handy buyer check on arrival, though it only estimates age and does not replace the Haugh unit or candling.
