HACCP and FSSAI: The Food Safety Behind Indian Egg Exports

In short: Indian egg exports are handled under FSSAI licensing and HACCP-based food-safety controls. HACCP identifies and controls hazards across grading, washing, packing and cold chain, while FSSAI licenses the operation. Together they give importers documented assurance of safe, consistent handling.

Key facts
  • FSSAI licenses the handling and packing operation
  • HACCP controls hazards at each critical step
  • Covers grading, washing, packing and cold chain
  • Digital batch records support traceability
  • Halal added for Gulf and some Asian markets

What HACCP controls

HACCP (Hazard Analysis and Critical Control Points) is a preventive system: each step from intake to stuffing is checked for food-safety hazards, with critical points monitored and recorded. It is how safety is built in rather than inspected at the end.

FSSAI licensing

The FSSAI licence covers the food business itself, the handling, grading and packing environment, under India's food-safety law. It sits alongside APEDA registration, covered in APEDA registration for egg export.

Records and traceability

Grading, candling and crack-detection results are recorded batch by batch, so every carton stays traceable to the farm and run that filled it. See quality and process.
